Easy, Nutritious Soup

Two easy options for semi-homemade, nutritious, fresh soup that can be prepared in minutes without having any fancy cooking skills.

Egg-Drop Cup-a-Soup

Put a packet of chicken noodle cup-a-soup in a fairly large mug. Add some instant (brown) rice and extra salt.
Boil water and stir a beaten egg into the pot of boiling water. Pour boiling water and egg into mug.
Stir thoroughly. Cover and let sit for five or ten minutes so the rice cooks.

Optional: Serve with hearty crackers, like Red Oval Farms Stoned Wheat Thins.
If you have high cholesterol, you can make egg-drop soup with just the egg whites instead of a whole egg.

Enhanced Ramen

Add the soup packet to a pot of water. Toss in small or cut up veggies of your choice.
When the water reaches a boil, stir in a beaten egg. Add noodles afterwards.
Cook a few minutes until noodles are done. Serve.
