Roasting Pumpkin Seeds

It's October and pumpkins are in season. I'm not a fan of stuff like pumpkin pie, but if you are going to carve Jack-o'-lanterns, don't toss the seeds in the trash!

Instead, separate them from the stringy orange stuff, lay them on a cookie sheet or similar, salt and roast on very low heat. Let cool and store in a container, like a large glass bowl with a plastic lid.

If you are lactose intolerant, pumpkin seeds are a good source of tryptophan, the stuff in warm milk and leftover turkey that makes you sleepy. They make an excellent late night snack to help you sleep and are a good source of other important nutrients.
