Baked Meat and Veggies

Cornish hen can be left overnight in the fridge to partially defrost or use frozen chicken breasts. Place in an oven pan, top with butter and spices of your choice (I use paprika and black pepper). Add water.

Add low starch potatoes that don't have to be peeled, like yellow and/or red new potatoes or cut up Golden potatoes, add baby carrots or regular carrots cut up into pieces. Add salt and spices to taste.

If you don't like your veggies very well done and browned, cook the meat for thirty minutes before adding the veggies.

Bake at 375 degrees for about an hour and fifteen minutes or so, until adequately browned.

If you are using a glass pan, do NOT add cold water after you start cooking. Boil the water if you didn't put in enough or the pan will shatter.

Baked chicken made by itself was the very first "real food" meal my son learned to make on his own. His shocking takeaway: "Cooking is just heating food!" This was the first step in overcoming his cooking phobia and turning him into the family cook.
