Sugar Cookies

Ingredients
  • 1 3/8 cups organic all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 cup (1 stick) organic butter, softened
  • 3/4 cups organic powdered sugar
  • 1 egg white
  • 1/2 teaspoon vanilla extract
Directions
  1. Preheat oven to 350 degrees F. In a large measuring cup, stir together flour and baking soda. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg white and vanilla. Gradually blend in the dry ingredients.
  3. Spread evenly over the bottom of a square glass baking pan (8 x 8 in).
  4. Bake 30 minutes in the preheated oven, or until golden. Cut into squares.
Originally published elsewhere 10 April 2009. This is a recipe we developed to get more egg whites into one of the family members. Our goal was to up protein intake while avoiding the sulfur in the yolks.

I published it on a health site of mine because of tripping across research that indicates that our mental model for diabetes may be wrong. People think insulin resistance is due to people being fat but some research suggests the issue is inadequate muscle mass rather than fat per se. Lack of sufficient protein in muscles plays an important role in developing insulin resistance in the body.
